The present invention relates to a manufacturing method of a strawberry beverage with high antioxidant activity using a strawberry calyx, which comprises: a step of drying strawberry calyxes; a step of crushing the dried strawberry calyxes; a step of extracting by adding 5 to 20 parts by weight of a solvent to 1 part by weight of the dried strawberry calyxes; a step of heating and cooling the extract; and a step of filtering and decompressed-concentrating the cooled extract. In addition, a strawberry beverage with enhanced antioxidant activity manufactured thereby is provided.
