The present invention relates to a yeast with a deleted ALD3 gene and a method of producing 2-phenylethanol using the same. Desirably, the present invention relates to the method of producing 2-phenylethanol using S.cerevisiae in which the ALD3 gene is deleted, and relates to a method for increasing a production of 2-phenylethanol by including phenylalanin in a culture medium as a single nitrogen source. In addition, a mutant with a deleted ALD2 is created in order to increase production efficiency, and the production amount of the 2-phenylethanol can be increased by overexpressing an ALD80 gene or additionally including a plasmid consisting of an ARO9 or ARO10 gene. The method of producing 2-phenylethanol according to the present invention has the advantage of being able to produce with a high yield at low costs under a more stable working condition than a chemical synthesis, while including fewer compounds harmful to a human body. |
