PROBLEM TO BE SOLVED: To provide a novel application of alanine in a food product.SOLUTION: Flavor (especially aroma and richness) of various food products such as hot sesame oil, tobanjan, chili sauce, XO sauce, pepper sauce, peperon oil, sweet flour paste, Tahini, oyster sauce, Chinese noodles, Laojiu, grifola soybean curd, teas such as oolong tea and jasmine tea, jaozi, shao mai, wonton, Chinese porridge, Chinese bun, and vegetable puree can be improved by blending alanine. |
