The present invention relates to a method for extracting nutritional ingredients from brown rice bran comprising: (a) a step for filling a container for extraction with brown rice bran; (b) a step for extracting nutritional ingredients from the brown rice bran using subcritical water as a solvent; and (c) a step for collecting the nutritional ingredients of the brown rice bran from the container. According to the present invention, the method has advantages in almost completely extracting the nutritional ingredients in the brown rice bran and being safe without using an organic solvent, and providing white rice having its own flavor and texture, and nutritional components equal or superior to those of the brown rice if adding the extract to the rice or rice products in order to give them the functional nutritious ingredients equal or superior to those of the brown rice.
