<p><P>PROBLEM TO BE SOLVED: To obtain refined rice wine having excellent ethanol resistance and improved taste and flavor by breeding transformed yeast that accumulates proline in cells and secretes a part of it to the outside of cells by gene recombination. <P>SOLUTION: The proline accumulation type transformed yeast is prepared by (a) a process for controlling a proline splitting system, which breaks the gene of a first proline splitting enzyme of the splitting system in a proline metabolic pathway in the yeast, (b) a process for enhancing a proline synthesis system for obtaining the gene of a variant encoding a first proline synthase of a synthesis system in the metabolic pathway and (c) a process for selecting a resistant strain and a sensitive strain.
