PURPOSE: A novel catfish processing method is provided to marinate catfish in a sauce before aging and processing, and to store the catfish in a refrigerator or a freezer. CONSTITUTION: Catfish is marinated in sauce, and aged. The aged catfish is dried and crushed. The obtained catfish powder is mixed with catfish mucus in a ratio of 1:0.5, and the mixture is molded into pills. The sauce is coated on the surface of the catfish after drying the catfish. The sauce contains 0.7-1 wt% of red pepper paste, 0.3-0.5 wt% of soy sauce, 0.4-1 wt% of sugar, 0.14-1 wt% of ginger, 0.3-1 wt% of garlic, 0.14-1 wt% of spring onion, and 0.14-1 wt% of sesame seed oil. |
