PROBLEM TO BE SOLVED: To provide a method of manufacturing a sweetness composition containing terpene/glycoside, having thin color and clean flavor, and in which undesired odor is the minimum or drop out.SOLUTION: A method of manufacturing a sweetness composition containing terpene/glycoside includes (a) a process of obtaining a liquid extract containing terpene/glycoside from a fresh plant source material containing terpene/glycoside, (b) a process of purifying the extract, (c) a process of concentrating terpene/glycoside in the extract to obtain purified solution containing terpene/glycoside, (d) a process of heating the purified solution containing terpene/glycoside at enough temperature for enough time to form melanoidin, and (e) a process of separating melanoidin from terpene/glycoside in the solution to obtain decolored solution containing terpene/glycoside. |
