PROBLEM TO BE SOLVED: To easily and quickly perform cooking and cooling thereafter and improve washability and workability thereof in production of foods including gelatine or the like.SOLUTION: Foods heated by a heating pot 2 are transferred to a cooling pot 3 via a transfer passage 5 by a pump 4 and cooled there. A sanitary pipe or a tube with flexibility is used for the transfer passage 5. The heating pot 2 and the cooling pot 3 include inner pots 6 and 12 in which foods are stored, and jackets 7 and 13 that are provided in the peripheries thereof and in which steam or cooling water is supplied. The heating pot 2, the transfer passage 5, the pump 4, and the cooling pot 3 are washed with warm water of less than 50°C produced by the heating pot 2. |
