An independent claim is included for a process for preparing food capsule comprising contacting a first liquid solution containing the food composition and a second liquid solution containing the food surface-active agent, precipitating agent and polyelectrolyte in the gelled state, forming a double-drop comprising internal phase liquidate formed from the first liquid solution and external phase liquidate formed from the second liquid solution, immersing the double-drop in a gelled solution containing a reagent capable of gelling the polyelectrolyte to obtain gelled external phase, and recovering formed food capsule. |
