<p>[Problem] In regard to fryers having a water layer beneath an oil layer, there has been demand for a fryer in which, even when an emulsified state arises in the boundary between the layers due to the water and oil mixing when new oil is added, the fryer can be made to function without waiting for the emulsified state to be resolved. [Solution] This method for using a fryer is characterized in being used for a fryer having: a tank for storing oil and water in two layers, top and bottom, which are an oil layer and a water layer, and including a drainage port in at least the water layer portion; and a heater for heating the oil layer; wherein the method comprises a water storage step for storing at least a predetermined amount of water in the tank, an oil addition step for adding a predetermined amount of oil after the water storage step, and a water discharge step for discharging the water of the water layer from the drainage port after the oil addition step.</p> |
