Provided is a composition fermented by a fermentation method comprising: a step for making grain powder by roasting grain and sterilizing it with steam, then pulverizing it; a step for putting the grain powder into an agitator; a step for dividing 32-24% of liquid spawn, per total weight of the powder put into the agitator, into 3 or 4 portions and adding a portion at a time, then stirring to be evenly absorbed; a step for placing a dough, which is kneaded in a state where water is evenly absorbed, or in a state where it is available to ventilate, on a wicker tray instead of shaping into pills or granules, and putting it into an apparatus for fermentation and drying, then fermenting it; a step for drying the fermented dough to have a moisture content of less than 10%; and a step for crushing by putting the dried fermented dough into a crusher to separate particles stuck to the dough at the fermentation step. |
