PROBLEM TO BE SOLVED: To provide a hydrous chocolate which allows for a long-period distribution of one year even under high moisture conditions, having exceptional flavor with reduced sweetness of sugar alcohol; and a chocolate which contains the hydrous chocolate in the center, having exceptional palatability.SOLUTION: The hydrous chocolate includes a water phase component and an oil phase component mainly composed of chocolate. The water phase component includes sorbitol (A), xylitol (B), and erythritol (C). The content percentages of (A) and (C) relative to the total content (D) of the three sugar alcohol satisfy the following expressions: 20%≤(A)/(D)≤80%, and 0%<(C)/(D)≤25%. The moisture content (E) is 12 to 20 wt.%. The water activity in the moisture content (E) is less than 0.60. |
