A method for automatic regulation of temperature-moisture regime while carrying out thermal treatment of sausage products provides for measuring and regulating the temperature of an air-stem mixture in the working area of a chamber, and also in the middle of a sausage loaf by means of changing the power an electrical heater, measuring and regulating the relative humidity in the working area of the chamber by means of changing the consumption of heating steam for moistening. The power of the electric heater is corrected proportionally to deviation of the current value of the temperature of the sausage loaf from that set up.
