摘要 The present invention relates to a hydrolysate obtainable by hydrolysing a substrate comprising at least one animal protein by a food-grade bacterium in an environment of less than 2 wt% salt content. The present invention further relates to a process for producing a hydrolysate, comprising the steps of a) mixing a substrate with a food- grade bacterium, and b) incubating the mixture of step a) under conditions of less than 2 wt% salt content, wherein the substrate comprises at least one animal protein. The hydrolysate or the hydrolysate obtainable from the process in accordance with the present invention is superior in flavour, aroma, texture and nutritional value, and may be used or further processed to obtain a food product. The present invention relates to a hydrolysate obtainable by hydrolysing a substrate comprising at least one animal protein by a food-grade bacterium in an environment of less than 2 wt% salt content. The present invention further relates to a process for producing a hydrolysate, comprising the steps of a) mixing a substrate with a food- grade bacterium, and b) incubating the mixture of step a) under conditions of less than 2 wt% salt content, wherein the substrate comprises at least one animal protein. The invention relates to a method for determining a change in a value of a capacitance (CL) of a capacitive component (1) having the following steps: - an electrical circuit arrangement (2) which comprises the capacitive component (CL) and a quartz oscillator (3) is produced, wherein the capacitive component (1) acts as a load capacitance for the quartz oscillator (3); - the quartz oscillator (3) is made to oscillate at a first frequency (f0); - the capacitance (CL) of the capacitive component (1) is changed; - when the capacitance has changed (CL±ΔCL), a deviation in the oscillation frequency (Δf) of the quartz oscillator (3) from the first frequency (f0) is determined; and - the change in the value of the capacitance (CL±ΔCL) of the capacitive component (1) is determined from the deviation in the oscillation frequency (Δf).
