PROBLEM TO BE SOLVED: To provide an oil-soluble pigment preparation for a food product, to which dispersibility to water is imparted by containing emulsifier in the oil-soluble pigment, and of which problem of color tone stability against agitation and washability of the pigment attached to a production apparatus of the food products etc. are improved.SOLUTION: An oil-soluble pigment preparation for a food product is a composition produced by dissolving: an oil-soluble pigment (i); an ester (ii) between polyglycerol with an average degree of polymerization of 2 to 4, and an unsaturated aliphatic acid; and medium-chain fatty acid triglyceride (iii). |
