The present invention relates to a frying machine equipped with a cooling unit, wherein the frying machine includes a chamber in which a first space accommodating oil communicates with a second space accommodating water. Here, the cooling unit is provided at a lower part of the first space to induce a convection process due to the temperature difference in the first space, so that foreign substances and the like generated at the time of frying are allowed to flow into the second space, which is disposed below, thereby preventing the generation of a carbide material in an oil layer. More specifically, the frying machine comprises: a chamber consisting of a first space accommodating oil and a second space accommodating water, wherein the second space communicates with a lower part of the first space; an opening and closing valve for opening or closing a boundary region between the first space and the second space; and a heating unit disposed in the first space to heat the oil accommodated in the first space. Here, the first frying machine further comprises: a cooling unit for preventing the heat of the oil accommodated in the first space from being transferred to the water accommodated in the second space, by cooling the heat between the heating unit and the opening and closing valve in the first space. |
