<p>This invention describes a process for extraction of calcium sensitive pectin from a pectin containing starting material comprising: a first step being an acid extraction, where said starting material is subjected to extraction using an acidic solution extracting a first extract leaving a first residuum, where said first extract comprises calcium tolerant pectin; optionally, a second step, where the first residuum is subjected to at least one washing resulting in a second residuum and a second extract; a third step being a second extraction, where said second residuum is subjected to said second extraction using a third solution extracting a third extract leaving a third residuum where said third extract comprises calcium sensitive pectin; and where the pH of said third solution is higher than the pH of said acidic solution. This invention further describes the pectin product obtained by the process as well as the use of the product for stabilizing beverages and/or structuring of acidified dairy products.</p> |
