Portioning- and kneading device (1) comprises a drum-shaped dough piece chamber support (2), a portioning segment (8), which is interchangeably attached on outer peripheral portion of the drum-shaped dough piece chamber support, and a driving means for the portioning segment. The portioning segment comprises at least one, preferably many measuring chambers with back and forth moving measuring flask. The portioning segment is brought into an intermediate installation position at the chamber support and from the intermediate installation position into a locking position at the chamber support.
