The present invention relates to an energy-saving apparatus for instantly manufacturing tofu and a manufacturing method of tofu using the same. The energy-saving apparatus for instantly manufacturing tofu according to the present invention comprises a water jacket (110) having an inner space; a complex bath (120) installed within the water jacket (110) and performing stirring, steaming and cooling; a stirring means (140) mixing materials input into the complex bath (120); a circulation space (112), which is a space between the outer wall of the complex bath (120) and the inner wall of the water jacket (110), supplied with hot water or cold water; a heating means (150) heating the hot water supplied to the circulation space (112); a hot water bath (210) storing hot water; a cold water bath (310) storing cold water; a fluid path connecting the water jacket (110), and the hot water bath (210) and the cold water bath (310), and guiding the supply and the recovery of hot water or cold water; a cold water recovery pipe (470) connected to the water jacket (110) and the cold water bath (310), and guiding the cold water overflown from the circulation space (112) to be collected to the cold water bath (310); a pump (450) installed in the fluid path and forcing the flow of hot water or cold water; a hot water pre-heating means (220) allowing to maintain the hot water in the hot water tank (210) at a set temperature; a cold water cooling means (320) allowing to maintain the cold water in the cold water tank (310) at a set temperature; and a control unit (510) controlling the operation of each configuration. According to the present invention, the volume of the apparatus is reduced, the water consumption is reduced, and the discharged effluent is reduced. |
