PURPOSE: An overheating prevention device of an oil-water separating fryer is provided to prevent overheating explosion by circulating exterior air first and cutting off the power of a heater secondly when the oil and water temperatures of oil and water layers are over predetermined temperatures. CONSTITUTION: An overheating prevention device of an oil-water separating fryer comprises a main body(2), a frying tub(5), a heater(6), a plurality of air-cooling pipes(9), and a cooling unit(8). The frying tub comprises first and second bimetals which are installed in positions corresponding to oil and water layers and detect the temperatures of oil and water to cut off the power of the heater when the oil and water temperatures are over predetermined temperatures. |
