PURPOSE:To prepare seasoned beef having taste of beef combined with the flavor and taste of coffee, by seasoning thinly sliced beef with coffee liquid. CONSTITUTION:Thinly sliced lean meat of beef, especially rump meat, is seasoned with coffee by parboiling the beef lightly in hot coffee liquid of a drinkable concentration after the manner of ''shabu-shabu'' (a Japanese-style cookery which comprises swishing thinly sliced beef slightly in the boiling soup). |
