The analysis device (1) has a receiving vessel (2) for receiving cooking oil (10) or roasting fat. A lid (8) covers the receiving vessel and includes two apertures (11,17). A measuring element (12) is extended through the aperture (11) to detect the temperature of the cooking oil or roasting fat. A cartridge (14) is incorporated into the aperture (17). The resin (15) accommodating the volatile substances of vapor, is contained in the cartridge. An evaluating unit (13) and a flushing system (23) are provided to evaluate the substance volatiles in the resin. An independent claim is included for method for analyzing volatile substances in vapor.
