PROBLEM TO BE SOLVED: To provide a manufacturing method of a wheat flour composition for making noodles having high visco-elasticity, excellent texture with softness and chewiness, and superior smoothness and taste, without use of processed starch.SOLUTION: A manufacturing method of an organic acid-containing wheat flour composition for making noodles includes the successive steps of adding an organic acid-containing aqueous solution to wheat flour such that the addition amount of the organic acid becomes 0.1 to 3 mass% after drying relative to the mass of the wheat flour, and drying the flour at a temperature of 40 to 120°C. A manufacturing method of noodles includes using the organic acid-containing wheat flour composition produced by the method. |
