PROBLEM TO BE SOLVED: To provide an emulsion composition which uses biosurfactant and has excellent water holding properties and stability, and a producing method of the emulsion composition.SOLUTION: A emulsion composition is produced by the method comprising the steps of: (1) mixing (A) a surfactin or its salt, and (B) water in a mass ratio ((A)/(B)) of the (A) component to the (B) component within the range of 0.4 to 1.4 to prepare a gel composition; (2) adding (C) an oil solution to the gel composition and mixing them; and (3) diluting the gel composition with (D) an aqueous component and mixing them. |
