PRODUCTION OF GINSENOSIDE RD AND GINSENOSIDE F2 USING NOVEL GINSENSIDE GLYCOSIDASE DERIVED FROM FLAVOBACTERIUM JOHNSONIAE

The present invention relates to a method for manufacturing ginsenoside Rd and ginsenoside F2 by converting PPD type ginseng saponin using a novel ginsenoside glycosidase protein, a transformant wherein a vector including a nucleic acid encoding the protein is introduced, or a culture of the transformant. More particularly, the present invention uses a novel ginsenoside protein derived from Flavobacterium johnsoniae and relates to: a composition for converting into ginsenoside Rd or ginsenoside F2, which is soluble ginseng saponin in a form of being easily absorbed within the body of PPD type ginseng saponin, including the protein, the transformant and the culture the transformant; the novel ginsenoside glycosidase protein; the nucleic acid encoding the protein; the vector including the nucleic acid; and the transformant wherein the vector is introduced.
