PROBLEM TO BE SOLVED: To provide soy sauce-containing food and drink products with enhanced flavor, which are manufactured by easy operation at low cost.SOLUTION: Soy sauce lees or desalinated soy sauce lees is treated in an environment in contact with subcritical water under high temperature and high pressure conditions of a temperature of 130 to 230°C and a pressure of 0.26 to 12.5 MPa for 1 to 120 minutes so as to produce a subcritical water treated product. The treated product is extracted with water-soluble solvent to form into a composition having effect for enhancing the flavor of soy sauce-containing food and drink products. A manufacturing method of soy sauce-containing food and drink products includes containing the composition. |
