PURPOSE: A method of manufacturing fermented soybean paste is provided to be able to save the manufacturing costs and time. CONSTITUTION: After steamed soybeans are inoculated with 0.05-0.5% of strains, soybean bricks are molded and fermented at 33-33 deg. C and 45-55% of relative humidity for 2-4 days. The fermented soybean bricks are dried at 35-37 deg. C for 13-18 days. Saline water with 13-17% of salinity is added to the dried and fermented soybean bricks, and the bricks are mixed and aged at 22-25 deg. C for 7-12 days. The strains are at least one selected from Bacillus licheniformis LS02 (KFCC11482P), Bacillus subtilis LS (KFCC11483P), Lactobacillus fermentum JS (KCCM 10499), and Aspergillus oryzae. |
