METHOD FOR PRODUCTION OF VINTAGE FORTIFIED DESSERT SWEET RED WINE « DESSERT KOKUR SUROZH»
摘要
A method for production of vintage fortified dessert sweet red wine includes introduction of 100% of wine material of grapes variety white Kokur. The wine is produced by noncomplete fermentation of wort from grapes variety white Kokur preliminary infused on fiber with fermentation stopping by addition of rectified ethyl alcohol and subsequent ageing of wine materials in oak container. The mass concentration of the extract obtained is controlled before ageing.
