PURPOSE: A manufacturing method of strawberry fermented wine or strawberry fermented drink is provided to manufacture a strawberry fermented product with a high concentration of alcohol by overcoming by-product and gas generation caused by a fermenting process of a high sugar, and to manufacture strawberry fermented wine or strawberry fermented drink with excellent preference, color, and yield by using the manufacturing method. CONSTITUTION: A manufacturing method of strawberry fermented wine or strawberry fermented drink comprises the following steps of: decomposing strawberry with a cellulose; filtering the enzyme treated material; supplementing sugar to make 25 to 40 brix by adding sugar to the filtered material; and alcohol-fermenting the sugar supplemented filtered material to prepare a strawberry fermented product with a high concentration of alcohol. |
