PURPOSE: Fermented onion liquid and a producing method thereof are provided to offer the unique flavor of each ingredients contained in the liquid to users. CONSTITUTION: A producing method of fermented onion liquid comprises the following steps: mixing onion and water in a ratio of 1:0.5-1.5, and heating the mixture at 60-120 deg C for 1.5-72 hours to obtain an onion extract; mixing 30-80wt% of vegetable ingredients with 20-70wt% of brown sugar or honey, and fermenting the mixture at room temperature for 3-6 months to obtain first fermentation liquid; mixing 50-97vol% of onion extract and 3-50vol% of first fermentation liquid; heating the mixture at 60-120 deg C for 2-7 hours; cooling the mixture at 5-30 deg C; and fermenting the cooled mixture at room temperature for 2 months-3 years, and packaging in a container. The vegetable ingredients are selected from edible fruits including Japanese apricot and grape, medical herbs, or vegetables. |
