<p>Pizza crusts prepared by adding water to feedstock materials containing at least wheat flour, domyoji-ko (glutinous rice flour) and yeast to give a dough; fermenting the dough; molding it into a sheet in a desired shape; then sandwiching the sheet between two porous plates preferably located at a definite interval; and frying. The obtained pizza crust (10) consists of top and bottom faces (11, 12) apart from each other and a continuous inner cavity (13). After putting sauce, cheese and other toppings, the pizza crust (10) is frozen or refrigerated, if necessary, to give a pizza for microwave cooking. This pizza shows a favorable texture and taste even though it has been frozen or refrigerated and then cooked in a microwave oven.</p> |
