Process for preparing alcoholic beverages, beer especially, in which a gas lift bioreactor utilizing internal circulation is used to carry out a continuous fermentation stage where wort containing fermentable sugars is initially fermented using flocculent yeast cells immobilized by self-aggregation in a restricted oxygen supply and the at least partially fermented discharge from the continuous process is delivered to a batch processing stage for finishing.
