PURPOSE: A producing method of red ginseng liquid using two-step fermenting processes using lactobacillus and enzymes is provided to obtain the red ginseng liquid containing high contents of ginsenoside Rh1, ginsenoside F2, ginsenoside Rg2, and ginsenoside Rg3. CONSTITUTION: A producing method of red ginseng liquid comprises the following steps: inserting 0.5-5%(v/v) of lactobacillus into the red ginseng liquid, stirring the mixture in the speed of 10-50rmp while fermenting the mixture at 25-37 deg C for 24-48 hours; inactivating the lactobacillus by processing the fermented mixture at 80-130 deg C for 5-30 minutes; injecting 0.5-5%(v/v) of enzyme into the mixture, and stirring the mixture in the speed of 10-50rmp while fermenting the mixture at 60-70 deg C for 2-6 hours; and filtering the fermented mixture before processing at 80-130 deg C for 5-50 minutes to inactivate the enzymes. The enzyme is selected from the group consisting of beta-glucosidase, alpha-glucosidase, alpha-amylase, beta-amylase, glucoamylase, isoamylase, polymethylgalactronase, cellulase, and invertase. |
