The present invention provides an apparatus for extracting saponin comprising: an extract storage tank storing at least one extract from balloon flower roots, Coconopsis lanceolata, milk vetch roots, and licorice; a saponin extracting tank connected to the extract storage tank by an extract transfer pipe and an extract return pipe having pumps; a saponin storage tank connected to the saponin extracting tank by a saponin transfer pipe having an inhalator; and at least one center rod, which has protrusions in the interior and exterior of the saponin extracting tank which is positioned in the saponin extracting tank. One end of the extract transfer pipe slantingly discharges the extract inside the saponin extracting tank in order to occur an extract eddy in the saponin extracting tank.
