The present invention relates to a gas supplying and discharging unit capable of preferably applied mainly to a gas range for business use and, more specifically, to a gas supplying and discharging unit for a gas range for business use capable of recognizing the gradual control of the amount of gas by an operation knob that a user operates and certainly performing ignition by supplying the divided remaining gas and main gas from the main gas pipe toward a burner. The present invention provides a gas supplying and discharging unit of a gas range for business use introducing and blocking gas from the main gas pipe by working with the operation of a knob together and includes: a valve main body mounted by installing a connection member in a main gas pipe; a main shaft resiliently rotating forward and backward by the operation of an operation knob which is arranged on one side of the valve main body; an interlocking shaft introducing or blocking gas by rotating a ball fixed and installed in the front end by connected with the main shaft; a first spraying nozzle for providing main gas for a burner by mounted on the rear end part of the valve main body; and a second spraying nozzle for providing remaining gas for the burner by connected to the upper end part of the valve main body.
