A coffee bean roaster and its control method are provided to enable one to conveniently use the roaster indoors, and to enhance the thermal efficiency by installing an open air coil heater, a ceramic heater, and a halogen lamp heater in a rotary drum. A coffee bean roaster comprises: a casing; a rotary drum(10) roasting raw coffee beans; a drum cover(13) shielding the exterior of the rotary drum; a heating device consisting of a halogen lamp heater installed in the rotary drum, an open air coil heater installed at the upper end of the drum cover, and a far-infrared ray ceramic heater(33) and a sheath heater installed at the left and right sides of the drum cover; a first temperature sensor(78-1) measuring the temperature of raw coffee beans and a second temperature sensor(78) measuring the inner temperature of the rotary drum; a storage part storing the data measured from the first and second temperature sensors after a fixed time passes from the point of a first crack or a second crack occurring in the roasting process; and a control unit controlling the heating device if the temperature of the raw coffee beans and the inner temperature of the rotary drum reach the data, thereby automatically lowering the inner temperature of the rotary drum. A control method of a coffee bean roaster comprises the steps of: (i) storing the data obtained by measuring the temperature of raw coffee beans and the inner temperature of a rotary drum after a fixed time passes from the point of a first crack or a second crack, in a storage part; (ii) judging if the temperature of the raw coffee beans and the inner temperature of the rotary drum reach the data stored in the storage part, from a micom of a control unit; and (iii) controlling a heating device by the micom of the control unit, if so.
