The apparatus removes undesired carbon dioxide from wine during the wine brewing process and enhances the taste of wine in as little as one hour. Using compressed air as the source, the apparatus reduces gaseous pressure in an enclosed container that is filled with wine. Reduced pressure makes the dissolved gas less soluble than under atmospheric pressure and thus extracts the gas from wine. The pressure level in container is monitored with a pressure gauge to prevent alcohol evaporation. The apparatus includes a vacuum ejector that uses compressed air to draw air out of the suction inlet, a connector that connects the ejector's motive inlet to the compressed air source, a vacuum pressure gauge that monitors the pressure in the container, a hose barb that connects the ejector's suction inlet to the container, and a 3-way coupler that connects the ejector's suction inlet, the gauge and the hose barb. |
