PROBLEM TO BE SOLVED: To automate deboning processing of separating dark meat with the bone into a leg part and a thigh part and separating the thigh part into thigh meat and thigh bone, and to improve meat yield in cutting to enhance the quality of boneless meat.SOLUTION: A knee joint length Lis measured at a workpiece supply portion (0ST) of a first processing station 1ST, and cuts are formed in a thigh meat part Y based on the measured knee joint length Lat a second processing station 2ST. At the same time, the entire length of the workpiece w is measured, and a knee joint length Lis computed from the past collection data on the basis of the measured entire length of the workpiece.
