The present invention relates to an instant gelatinization dried noodle which wheat is utilized as a main material and a producing method thereof and, more specifically, to a composite for producing the instant gelatinization dried noodle which includes flour, rice powder, starch, food starch modified, and salt; a method for producing the instant gelatinization dried noodle by utilizing the composite; and the instant gelatinization dried noodle manufactured by the same. The composite is utilized for producing the instant gelatinization dried noodle which has an excellent recovery force without boiling the noodle with hot water and which a user can easily take; provides a chewy taste and smooth noodles without being sodden when the noodle is recovered; and has an excellent moisture holding ability when scooping the noodles. The instant gelatinization dried noodle produced by the method of the present invention is provided to have an excellent recovery force even though a hot-wind drying method is utilized; to have a little amount of melted starch; and to improve the viscoelasticity (chewy taste) of the noodle after the noodle is recovered while maintaining the smooth taste of the noodle. |
