The present invention relates to a method of manufacturing a spicy chicken bulgogi which tastes like a bulgogi, in particular, a method of manufacturing a chicken bulgogi which is tender and easily edible by preprocessing and hulling bones from an unfrozen chicken, refrigerating the chicken using only pieces of meat and preparing meat stock and appropriate sauce by adding a herb medicine and et cetera. According to the present invention, not only a chicken bulgogi food including only smooth pieces of meat by removing bones to satisfy the taste of consumer and which is easily eaten by a consumer is provided but also a standard of manufacturing a chicken bulgogi by seasoning to satisfy the taste of the consumer and hygienically vacuum-packing with a constant amount.
