The present invention relates to extracts of Japanese eel (Anguilla Japonica) bone by-products, prepared by low temperature vacuum extraction and, more specifically, to the extract of Japanese eel (Anguilla Japonica) bone by-products having anti-atherosclerotic and vascular diseases preventive and inhibitive activities, prepared by low temperature vacuum extraction and prepared by: washing and carefully selecting eel by-products of head, liver, intestine, gall bladder, and epidermis parts; and making the eel bone and by-products into powder by low temperature vacuum. The extracts using the pulverized powder have anti-atherosclerotic and vascular diseases preventive and inhibitive activities and have anti-aging effects and immune stimulating activities so that the extracts can be used as health supplements.
