The present invention relates to a method for manufacturing tea using dried shitake and dried shitake tea manufactured thereby and, more specifically, a method for manufacturing tea using dried shitake comprising: a step for cutting the dried shitake selected to manufacture tea, the unique savory taste and fishy taste are improved, into 1.5-2.0 cm; a step for mixing 100 parts by weight of the cut dried shitake and 200 parts by weight of water, then aging at 38-42°C for 24-27 hours; a step for steaming the aged shitake in the steamer at 80-120°C for 10-20 minutes; a step for drying primarily the steamed shitake at 60-70°C for 8-10 hours to have moisture content of 30-40%; a first roasting step for roasting primarily the dried shitake in the roasting pot at 180-200°C for an hour; a second roasting step for roasting secondarily the primarily roasted shitake at 100-110°C for an hour; a third roasting step for roasting tertiarily the secondarily roasted shitake at 70-80°C for 8 hours; and a step for drying secondarily the tertiarily roasted shitake using a dryer with an air blower, and dried shitake tea manufactured by the manufacturing method.
