PROBLEM TO BE SOLVED: To provide a method capable of producing various furaldehyde even under conditions where one or more kinds of sugar substrates are mixed, by reacting various sugars such as hemicellulose-derived sugar or other plant-derived sugar through hydrolysis, isomerization and dehydration reaction, or isomerization and dehydration reaction using a lowly toxic catalyst under mild reaction conditions; and to provide a readily reusable catalyst for promoting hydrolysis, isomerization and dehydration reaction, or isomerization and dehydration reaction of various sugars such as hemicellulose-derived sugar or other plant-derived sugar.SOLUTION: There is provided a production method of furaldehyde selected from 2-furaldehyde, 5-methyl-2-furaldehyde and 5-hydroxymethyl-2-furaldehyde, which comprises a furaldehyde-forming step of forming at least any of the furaldehyde from, as a raw material, one or more sugars selected from the group consisting of D-galactose, D-arabinose, L-rhamnose, lactose and raffinose in a reaction system where a basic catalyst including hydrotalcite and an acidic catalyst including an anion exchange resin having an acidic functional group exist. |
