PROBLEM TO BE SOLVED: To provide a method of producing oligosaccharide which is simple, efficient, safe, and low-cost.SOLUTION: A method of producing an oligosaccharide includes: the step 1 of bringing a first sugar substrate and a second sugar substrate into contact with an Aspergillus hypha immobilization carrier that holds a &bgr;-fructofuranosidase; the step 2 of performing a transglucosylation with the &bgr;-fructofuranosidase held in the hypha in the Aspergillus hypha immobilization carrier after the contact to generate the oligosaccharide from the first sugar substrate and the second sugar substrate; and the step 3 of purifying the oligosaccharide. |
