The device has an evaporator (14) provided for water (52), where the evaporator comprises a detection area (22) attached to a heatable water tank (20) according to the type of communicating pipes for detecting a liquid level of the water tank. The detection area is designed like a pipe or a channel and includes two sensors (32a, 32b) for detecting the liquid level. The sensor area exhibits two electrically conducting areas (24, 34) that are electrically insulated against each other in a partly emptied condition of the evaporator. Independent claims are also included for the following: (1) an evaluation device for an evaporator device (2) a method for operating an evaporator device.
