The use of an extract of hop, a hydrogenated extract of hop, alpha or beta hop acids, hydrogenated hop acids, derivatives of the acids or their resins individually or in combination on the interior surface of a cellulosic envelope used in the process of producing cooked meat products in skins to avoid the appearance of gram-positive bacteria in the products. Independent claims are included for (1) a cellulosic envelope for meat products covered internally with a solution of the hop extracts and/or acids and/or derivatives and/or resins which is free from other supplementary antimicrobial agents which are not vegetable extracts; (2) a meat product which has been treated using the claimed envelope; (3) a method of applying to a food product a solution of hop extracts and/or acids and/or derivatives and/or resins comprising applying the solution to the interior of an envelope, filling with a meat emulsion, reheating and smoking the meat product in such a way that the solution transfers to the surface of the meat and removing the cellulosic envelope. |
