PROBLEM TO BE SOLVED: To provide a production management method and production management system capable of quickly reducing intermediate work in process even in the case that a time required for inspection extends over a long time.SOLUTION: A production management system 1 for executing a bacteriological inspection on a lump of meat 2 subdivided to a subdivision pack 20 with an alternate inspection 10a1 using a microorganism inspection device 12, and a culture inspection 10a2 for culturing bacterium has a control device 3 for giving an individually identifiable identification code 20a to the subdivision pack 20. The control device 3 allows the lump of meat 2 to be proceeded to a production part 10b on the basis of a first inspection result of the alternate inspection 10a1 having a short inspection time, and also enables the identification code 20a attached to the subdivision pack 20 obtained by subdividing the lump of meat 2 to be selected when a second inspection result of the culture inspection 10a2 having a long inspection time does not satisfy prescribed reference, which is made to be a production management method in the production management system 1. |
