PURPOSE: A producing method of fermented curcuma longa using lactobacillus johnsonii IDCC-9203 is provided to inject the lactobacillus johnsonii IDCC-9203 to a medium containing curcuma longa powder to obtain the fermented curcuma longa. CONSTITUTION: A producing method of fermented curcuma longa using lactobacillus johnsonii IDCC-9203 comprises the following steps: culturing fungi of the lactobacillus johnsonii IDCC-9203 in an MRS medium containing 1-4% of fish peptone; fermenting the lactobacillus in a fermentation medium formed with 1-5% of curcuma longa, 1% of glucose, and 0.5% of peptone for 20-24 hours; neutralizing the obtained fermented curcuma longa liquid with 10% sodium hydroxide or 20% sodium carbonate into the pH of 6.5-7; adding alcohol to the fermented curcuma longa liquid for extracting active components including curcumin, demethoxycurcumin, bisdemethoxycurcumin; and adding starch to the liquid before freeze-drying. |
