The present invention relates to an overcooked rice roll of fried rice on a stone panel and a manufacturing method thereof. The present invention provides an overcooked rice roll of fried rice on a stone panel which is manufactured by thinly spreading seasoned rice on a heated stone panel, overcooking and rolling the rice. Specifically, the manufacturing method of the overcooked rice roll of fried rice on a stone panel comprises a step of preparing seasoned rice with various ingredients; a step of quenching the heated stone panel by washing with water; a step of mixing the seasoned rice on the heated stone panel; a step of thinly spreading the mixed seasoned rice and overcooking; and a step of rolling by scraping the overcooked rice. The present invention provides a nourishing overcooked rice roll of fried rice which is manufactured by rolling overcooked rice fried on a stone panel to have the rice roll at a gulp. The overcooked rice roll provides crispy, sweet and delicious tastes which children like, and healthy dietary habits due to low calories, and digests well.
