The present invention provides a production method of pickled Dioscorea bulbifera, which comprises the following steps of: removing the skin from Dioscorea bulbifera, and washing; peeling and cutting the Dioscorea bulbifera; mixing the cut Dioscorea bulbifera with liquor lees, salt, soju, and sugar for pickling; and aging and fermenting the pickled Dioscorea bulbifera for 2-3 months.
